NC State Extension is committed to mentoring young professionals in preparing for tomorrow’s future. This fall the N.C. Cooperative Extension, Gaston County Center proudly welcomes the following Dietetic Interns, who have recently completed their undergraduate studies in the field of dietetics. These interns will have an opportunity to be a part of our remote learning series, such as Med Instead of Meds, Cooking Smart with Fall Foods, and the annual Somethin’ Pumpkin event.

Kendra DavisKendra Davis

Winthrop University, Dietetic Internship Program

I am a graduate of Appalachian State University and Johnson and Wales University with degrees in Nutrition and Foods and Culinary Arts. As a dietetic intern, I am working towards the goal of becoming a registered dietitian. By working with dietetic professionals such as, Linda J. Minges, I hope to gain a better understanding of my role as a future dietitian and be able to better serve the community. I look forward to the projects I’ll be working on with NC State Extension – such as Somethin’ Pumpkin and Med Instead of Meds.

Lenoir-Rhyne, Dietetic Internship Program

After graduation from the University of North Florida with a Bachelor of Science in Nutrition and Dietetics, I decided to pursue a Dietetic Internship as a way to prepare me to become a Registered Dietitian. I’m looking forward to exploring the various ways to be able to serve the local community. Now more than ever, there is a need in the community for resources and support. I’m looking forward to conducting a variety of remote-based presentations, like the upcoming “fall food” presentation and “making sense of food label” presentation. Can’t wait to work alongside a group of dedicated and talented professionals.

Lenoir-Rhyne, Dietetic Internship Program

I was born and raised in Gastonia, NC, and received my Bachelor of Science in and dietetics from Appalachian State University in 2018. I finished my master’s in Public Health through Appalachian State as well in August of this year. Through my dietetic internship, I will be working in the foothills of North Carolina, and in part with Linda J. Minges at N.C. Cooperative Extension – Gaston County Center. I am looking forward to working with NC State Extension and learning more about the county I grew up in and completing projects and working on programs serving Gaston county.

Jordan Sawyer

Winthrop University, Dietetic Internship Program 

Jordan SawyerI graduated this spring from Clemson University with a degree in Food Science and Human Nutrition. In pursuit of becoming a Registered Dietitian Nutritionist, I began a Dietetic Internship with Winthrop University this fall. As a Dietetic Intern, I will be working alongside different sites in the Charlotte area. I have the pleasure of working with the Family & Consumer Science Agent, Linda J. Minges, with whom I will be assisting with many community-centered projects – one of which is Somethin’ Pumpkin. I’m excited to be a part of the NC State Extension team!
